The girls on the workshop enjoyed my Crunchy Toffee Apple pud, so easy to make, and its apple time and lots of them! So here's the recipe for you to try.
Crunchy Toffee Apple pudding
Peel, core and slice 2lbs/ 900g apples, cook with 4oz/ 110g sugar until soft. (I used both cooking and desert apples, sweeten according to taste). Cool.
Pour into a glass bowl (if you prefer liquidise) so you can see the layers.
Carefully top with a layer of whipped double cream, or combine greek yoghurt and single cream and use instead.
Melt 2oz/ 50g butter,1 tblsp golden syrup and 1tblsp of caster sugar, pour in enough cornflakes and coat.
Optional, add a little grated crystalised ginger to the cornflakes and scatter lightly on top of the cream.
Chill before serving.
