 Fish Soup
This is a satisfying main course or a colourful starter. Easy to cook, just keep chopping and adding to the pot, cooking as you go.  Very tasty served with ciabatta crutons. 

3 tblsp                          olive oil
1 med                           onion, chopped
2 med                           leeks, chopped
2                                  red peppers, diced
2                                  garlic cloves, crushed
1                                  saffron, large pinch
1                                  dried hot red chilli flakes (optional)
1                                  fresh bay leaf
½tsp                             fresh or dried thyme
1 large                          tin of tomatoes, chopped ( 2 tins to stretch 2 feed more!)
9oz/ 250g                     potatoes cut into cubes
8fl oz/ 225ml                dry white wine or a good splosh!
15fl oz / 425ml              fish stock
1½ lb/ 750g                  mix of fish, skinned and cut into chucks; halibut, cod, salmon, haddock, pollock.
                                    double cream,  just guess how much
                                    parsley, chopped

Heat oil in large saucepan, add onion and sweat for 10 mins. Add leeks, pepper, garlic and saffron and cook until softened. Add chilli, herbs and cook for further 5 minutes.
Stir in tomatoes, then add wine and potatoes and cook for 10 minutes.
Add fish and stock, simmer for 10 minutes until fish is cooked.
To serve add cream and chopped parsley with croutons and crusty bread.

Croutons; chop ciabatta bread or French stick into small chunks, day old bread is best and toss in seasoned olive oil with dried thyme added.  Cook on a baking sheet in a hot oven for 10 minutes turning once or twice.
