Recipe- mincemeat cake

Mincemeat Cake.  Oven 160C, Gas mark 3, my aga- top shelf of bottom oven.

All fed up with mince pies and you have jars of mincemeat left in the cupboard? Then try this recipe, easy to make and it can last all week if you restrict your loved ones to ½ slice per day in their lunch box!

5oz/150g          soft margarine or butter
5oz/150g          soft brown (or dark brown sugar, makes a richer cake)
2                      eggs
8oz/225g         SR flour
3oz/75g           sultanas
1lb/450g          jar of mincemeat

Place all ingredients into a bowl and mix until well blended.  Turn into a lined 1lb loaf tin, I used a oblong tin, cooks quicker. 
Sprinkle with flaked almonds and bake for 1¾ hours until golden brown. 
Glaze the top with a little melted honey and leave in tin until cool before your slice.

We are very lucky as we have some lovely neighbours and good friends and such lovely guests who come and stay.  They return, some many times, and they also recommend.  So many people passing through our lives, we feel truly touched and our lives enriched.
